Over the past years, we have served thousands of oysters islandwide and shared with our customers privately some of our favorite sauce recipes. With social distancing in place, we got some time to kill so we decided to share them with you in this post.

If you want to impress your guests or just can’t take lemon anymore, here is a list of easy sauces you can make at home.

The traditional Mignonette

3 tablespoons red wine vinegar
2 tablespoons shallots minced or chopped
1/4 teaspoon of sugar
Salt and pepper
Mix all the ingredients and serve with fresh oysters. Try also with Raspberry vinegar instead of red vinegar.

The Prosecco Mignonette

1/4 cup fresh lemon juice
1/2 teaspoon of pepper
2 teaspoons shallots minced or chopped
1/4 cup prosecco
Mix all ingredients, adjust to taste, and serve.

The Horseradish

1 cup ketchup
2 tablespoons horseradish grated
Drops of tabasco
Drops of Worcestershire sauce
1 teaspoon lime juice
Mix all ingredients, adjust to taste, and serve.

The Oriental

1 teaspoon finely grated ginger root
Juice of half a lemon
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon minced finely garlic
2 teaspoons minced onion
Mix all ingredients, adjust to taste, and serve.

The Tanguy Asian

1/4 cup of white vinegar
2 teaspoons olive oil
Juice of one lime
1 tablespoon of Asian herbs (coriander, Thai basil, mint, etc)
1 tablespoon fine sugar
1/4 chili padi minced
Salt and pepper
Mix well all ingredients, adjust, and serve.
